Erubiel Mota Martinez

Erubiel Mota Martinez, a third-generation master distiller from Zapotitlán Lagunas in the Silacayoapán district of Oaxaca's northern Mixteca region, carries forward a family legacy in agave spirit-making that began over a century ago with his grandmother, Ester, who pioneered the craft. Encouraged by his parents to pursue higher education, Erubiel attended college and became a Computer Science Engineer. In 2014, he returned to the family business, committed to continuing and preserving their rich heritage.

THE BATCH

This batch of Papalometl Capón (Agave potatorum) is crafted entirely from wild agaves harvested after a one-year capón period. The agave matured over 11 years, with nearby cattle and goats naturally helping capón the plants by feeding on the sprouting quiotes. It is cooked for seven days in an underground pit oven covered with palm leaves, then crushed using an agave shredder. The fibers ferment in wooden vats with well water for natural fermentation over six to eight days, and the spirit is then double distilled in alembic pots.
