THE MAESTRO

Juan Meza

Juan Meza was born in Santiago Coatepec, in the Mixteca Baja region of Puebla, Juan Meza is a fourth-generation mezcal producer. With more than 38 years of experience as a maestro mezcalero, he continues his family's tradition of crafting mezcal while preserving the region's agave heritage. In addition to distillation, Juan is dedicated to agave propagation through seed collection and cultivation, helping support the reforestation and sustainability of native agave populations throughout the region.

THE BATCH

Pitzometl agaves reach full maturity after approximately 11 to 15 years in the wild. Once harvested, the agaves are roasted for 12 days in a traditional underground conical earthen oven, then milled using a mechanical shredder.

Fermentation takes place for 10 days in open-air pine wood vats using well water sourced locally. The spirit is then double distilled in copper pot stills, producing a mezcal that reflects both the character of the agave and the traditions of the Mixteca Poblana region. This batch is a testament to patience, craftsmanship, and the unique terroir of Santiago Coatepec, Puebla.
