THE MAESTRO

Wilfrido García Sánchez

Wilfrido García Sánchez is a third-generation mezcalero and maguey grower from Logoche, a tiny mountain village in the Sierra Sur of Miahuatlán, Oaxaca. At age twelve, he began learning the craft from his parents and grandparents, working the land and doing the hard, physical work of making mezcal by hand. Wilfrido is deeply committed to rescuing native maguey varieties and preserving tradition. With just about 100 people in his village, the mineral-rich red, black, and white soils give his agave spirits its distinct flavor, a true expression of place. Every batch is a family effort, made with patience, pride, and passion.

THE BATCH

This ensamble of puntas is made from three wild-grown magueyes: 17-year-old Tepextate (Agave marmorata) grown in rocky black soil, 13-year-old Bicuixe (Agave karwinskii) grown in clay soil, and 15-year-old Jabalí (Agave convallis). The maguey is roasted in an earth and stone pit oven, then cut by hand with a machete and brought to a finer consistency with a mechanical shredder. The sweet fibers ferment in a wooden vat for 9 days with wild yeast and artesian well water, and once fermentation is complete, the spirit is double distilled using only the puntas, or heads of the distillation, for a higher ABV. This batch was then rested in glass for 2 years before bottling.
