THE MAESTRO

Víctor Filio Bello

Víctor Filio Bello is a fifth-generation sugar cane producer from El Camarón Huautepec, Oaxaca, a land where farming and tradition are passed down as a living heritage. He grew up among sugarcane fields, listening to the stories of those who dedicated their lives to making aguardiente, learning that each batch holds memories, time, and respect for the land. At the age of 28, he decided to begin his own path in the area known as El Carrizal, in El Camarón. His inspiration came from his uncles, who, with their team and knowledge, showed him that aguardiente is not only produced: it is cared for, understood, and honored. Today, after 35 years, Víctor continues this tradition with patience and conviction, keeping alive the artisanal methods that define the identity of Oaxacan aguardiente, faithful to his roots and his people.

THE BATCH

This batch of single variety yellow sugarcane is grown in El Camarón Huatepec, Oaxaca, a land marked by intense sun, seasonal rains, and constant fieldwork. The cane is cut by hand when it reaches its peak and taken to the mill, where approximately eight mules of cane are ground to extract the fresh juice that begins the process. The juice rests in natural fermentation vats, where time, climate, and the environment do their part without haste. Later, the mash is distilled in an artisanal manner for five to six hours, carefully attending to each step as it has been done for generations. The result is an aguardiente of deep and honest character with aromas that recall freshly cut cane, damp earth, and the warmth of the countryside. On the palate, it is warm, persistent, and expressive—a distillate that preserves the memory of the place, the inherited craft, and the spirit of Oaxaca.
