THE MAESTRO

Aniceto Garcia

Aniceto Garcia was born in Yegosé in 1959, a rocky, hilly area in Oaxaca’s highlands a few hundred miles from the Pacific Coast. Although school was a priority, his family’s needs were too great to ignore, and at the age of 10 he began apprenticing under his father, pulling tepextate and tobala magueyes from the austere, rocky soil and hauling them by mule. By age 16, he had mastered the craft, producing up to four small batches of mezcal in his early years.

THE BATCH

After six years, this Espadín (agave angustifolia) was harvested at peak maturity and roasted in an earth and stone pit oven for 5 days, then rested for three days. The cooked agave hearts were hand mashed with a wooden mallet, and the sweet fibers fermented for about 8 days in open wooden vats with well water and wild yeast. Finally, it was distilled twice in a copper pot to create the finished spirit.
