THE MAESTRO

Victor Ramos Lucas

Victor Ramos Lucas is a second-generation maestro from the small town of Mengoli de Morelos, located in Miahuatlán de Porfirio Díaz, Oaxaca. From a young age, he was immersed in the agave spirit-making tradition, recalling how he would stoke the fire for the stills at just five years old in his father Pablo’s palenque. At 16, he took a significant step in his craft by harvesting and distilling madrecuixe (Agave karwinskii), creating his very first batch of agave spirit. Today, Victor works alongside his wife, Natalia, at their palenque. Like Victor, Natalia comes from an agave spirit family, and together they continue the family tradition.

Family Tradition Continues

THE BATCH

This is a very small batch of Barreno (Agave karwinskii), which can take up to 10 to 12 years to reach full maturity. The agave is cooked in a conical earthen oven, then crushed using a traditional tahona stone before the fibers ferment in wooden vats for about four to six days with well water for natural fermentation. Once fermentation is complete, it is double distilled in a copper refrescadera still, resulting in a careful and traditional expression of high-quality agave spirit.
