Nicolás García Vásquez is a third-generation maestro from the small town of Logoche in Miahuatlán, Oaxaca. Raised in an agave spirit-producing family, Nico began working with his father and grandfather in their palenque as a teenager. In the late '90s, he took a journey to the United States, working in agriculture across several states. Eventually, he returned to Logoche to dedicate himself to cultivating various agave species and crafting agave spirits, fully embracing his roots and family tradition.

THE BATCH
This is a very small batch of Quiote de Tobalá (Agave potatorum), made exclusively from the quiote, or flower stalk, of Tobalá grown under the shade of oak trees and shrubs in the cooler climate of Logoche, Miahuatlán. The quiote was harvested in early summer starting in June, then roasted in earth and stone pit ovens and rested until cool for about 5 days. It was then ground and fermented for 7 days with only wild yeast and artesian well water, and finally double distilled in copper pots.
