THE MAESTRO

Simeon Ramirez Pacheco

Simeon Ramirez Pacheco is a third-generation maestro mezcalero from San Agustin Amatengo who began apprenticing under his father at just 6 years old. While his father worked in the fields, Simeon and his brother were entrusted with tending the palenque, and by age 12 he was already trimming and hauling magueyes, deepening his understanding of the craft. At 16, he produced his first batch from start to finish using endemic agave varieties for a “revoltijo” distillation. Today, his two daughters are also learning the art, continuing the family tradition into a new generation.

Family Tradition Lives On

THE BATCH

This batch is made from 100% wild-grown Tobasiche (agave karwinskii), which takes about 10 to 12 years to reach full maturity. Harvested in the hills of Amatengo, the agave is roasted in an earth and stone pit for 48 hours, then cut by machete and shredded. It is fermented for 4 days in open pine vats with natural wild yeast and artesian well water, then distilled only once in copper pots with a traditional refrescadera, creating a bold and distinctive expression.
